Our love of artisanal products flourished during our many years of traveling the world together. In France, where we lived for five years, we quickly learned to appreciate the dedication, pride and craftsmanship that go into every local product, salt in particular.

One such salt, Fleur de Sel de Guérande, from the Brittany region of France has its own poignant story. In the mid 1970’s traditional production methods were revived from near extinction through the courage and hard work of a small group of artisanal producers. Their salt is now one of the most revered and sought after salts in the world, loved by chefs and home cooks alike.

We have since learned that the qualities and dedication of these Brittany salt workers is mirrored in many similar stories from around the world. While sourcing our salt supplies we have talked to various suppliers and producers across the globe, and they all have something in common; a passion to keep traditional salt making techniques alive and a desire to produce the finest unrefined salt possible. Just talk to Roland in the Kalahari Desert, Jim and Darcy up in Alaska, Bjorn over in Iceland and you would know what we mean. There is an infectious enthusiasm within them all that is highly addictive.

We are delighted to be able to pass that passion on to you while at the same time enlightening, informing and educating you to the truly fascinating wide array of natural salts that are out there awaiting your discovery. And don’t forget, salt is not just for cooking. The nuanced subtleties of many salts can be quickly lost if they are just added in prior to cooking. Some of the salts are particularly just for finishing such as Kilauea Black, and Alaea Red. The natural components (coconut charcoal, red clay) would be lost in cooking.

One of our mottos is “use less, taste more” and if used correctly, the flavors of any and all foods can be greatly enhanced by the correct use of salt.

This is evidenced by what happened to us one day in France when we asked our local butcher the best way to cook the beautiful steaks we had just purchased. He looked at us bemused at first, before telling us to simply grill the meat without seasoning it first (his logic telling us that salt added prior to cooking would draw out all the moisture and natural juices). Far better, he told us, to grill simply without pre-seasoning and then to finish afterwards with your preferred salt to taste. And you know something? He was right. And that leads us on to our other favorite motto…..

“It’s how you finish that matters”

Even the most basic and simple of foods can be elevated and their taste heightened by the simple act of sprinkling a few grains of unrefined salt over them.

Try Molokai Kilauea Black salt over Pineapple or Cherrywood Smoked salt over vanilla ice cream. How about our Ginger Lovers salt over grilled chicken or Murray River Pink from Australia on your grapefruit? Potatoes can be enlivened by just a dash of Persian Blue, and popcorn comes alive when you add a bit of Saffron salt.
